Application of natural pigments in producing essential oils color and protection of foods

چکیده مقاله

The color is an impartible component in the nature which is always presented in the human life via different ways, and plays an important role. The colors are chemical, mineral or derived from plants. Nowadays, the use of plant pigment has widely been considered throughout the world. The chemical colors threat the human health, and have numerous harms. In the food, clothing and cosmetics industries, the colors are directly in contact with the human’s body. Therefore, the purpose of this research is the optimal usage of natural pigments in the food industry. The protective covers of warm and cold foods which are produced from chemical colors and applied as packaging and cellophane are in the direct contact with foods. The immune system of body and digestive system are exposed to the harmful chemicals in these covers. The natural pigments are in different parts of plants such as fruits, flowers, leaves, and stems. Some of these plants have pharmaceutical properties and are useful for the human’s health and safety. Due to a wide range of vegetation in Iran, 10 samples from different parts of plants have been investigated. During dyeing process, first, the color fastness process was carried out to compare the samples with each other. Also, investigating antimicrobial effects on the selected samples were conducted. The present samples not only have pharmaceutical properties and strong antibacterial effects, but also have unique characteristics in the production of yellow-red and yellow-green color ranges.

The research has been carried out in the scientific and practical way.
